I’ve always believed that you can cook the best meat in the world, meat so juicy and tasty that it’s to die for, but it will be nothing if the seasoning you made to go with it is horrible. The best barbecue seasonings can lift meat to new heights of flavour experience, and add a touch of zing to make your meat a little more exciting. I’m a big fan of constantly trying new flavours, after all that’s why we have taste buds and I wouldn’t be a food lover if I didn’t want to have new taste experiences. You can travel to all four corners of the world and find a new spice you’ve never tried before, but we don’t all have the luxury of travelling the world just to eat food.

I’ve recently become aware of this little business based in Cornwall, and I’m itching to give their massive and varied range of spices and seasonings a try. Lemongrass and Ginger Mix
This delicious mix is a popular combination in parts of Asia; namely Vietnam and Thailand. It has a unique citrus-tinged spicy flavour that goes perfect with chicken. While a popular way to enjoy this mix is to add it to a chicken stir-fry dish, it works well on barbecued chicken too.
Add a touch of garlic and black pepper for an extra kick!
Lemon pepper is a colourful and mild blend of spices that works extremely well as a rub on for various meats. Cold or hot; you can easily enjoy this zesty rub. However, it’s not just meat that it goes well with – it also works well in a vegetable stir fry or in soup and stews. Try it with some chicken goujons for the ultimate combination.
The distinctive flavour of allspice makes it perfect for use in many dishes, with the vast majority of them being of Caribbean origin. It’s commonly used in Jerk seasoning, which opens you up to a whole world of different taste experiences that originated on the island nation of Jamaica. When it comes to barbecue it also works well in a myriad of barbecue sauces; from Kansas City-Style BBQ Sauce, Jamaican Jerk BBQ Sauce and Molasses Barbecue Sauce amongst many others. Allspice leads you down so many different food related roads that we could produce entire books on it. I suppose you could call it the ultimate spice!
Paprika is one of my favourite spices; I just can’t seem to get enough of it lately and I seem to be putting it on pretty much everything. Smoked paprika is a touch tastier for adding to barbecued meats in my opinion, and whenever I grill up Spanish Chicken on the barbecue I make sure I add it. I can’t complete this post without mentioning a little Middle Eastern flavour, and Baharat is one of my favourite spice mixes. It’s a blend of smoky and sweet flavours that’s out of this world when applied as a rub on red meats. It works best when used to season lamb, but you can use it to perk up pretty much any red meat – as well as fish, poultry and even vegetables – you put on the barbecue. It’s also best applied before cooking to let the flavours soak into the meat.
