It’s the little things that make all the difference and as so much planning can go into creating the perfect barbecue party; snacks and side dishes can easily be forgotten about until the last minute. That last mad rush then consists of throwing a few packets of crisps into a bowl and raiding the cupboard for other edible treats. Not ideal and no way to impress the guests either.
We have decided to create a mini-series, like we did with our popular barbecues from around the world and each week you will get a new recipe, or two.
Today’s Barbecue Side Dishes
Buttermilk and Parmesan Potatoes
This little number is perfect as a side dish at any barbecue and it doesn’t take that long to prepare either. If you want to reduce the rush for the meat feast then this is just the recipe you need.
(Serves 4 people so if you have more guests just increase the numbers)
- 1.5lb of Jersey Royal potatoes
- 2 large tablespoons of mayonnaise
- 200ml of buttermilk
- One crushed garlic clove
- 30 grams of Parmesan cheese (grated)
- Handful of fresh chives (chopped)
There is no need to peel these types of potato; any skin that is flaking can be rubbed off easily enough with your fingers. Check out Jersey Royals website for more potato recipes.
Grab a large saucepan and bring to the boil.
Add potatoes, and once boiling, reduce the heat to simmer for around 12-14 minutes.
While the potatoes are on the boil, grab the remaining ingredients and a large bowl and mix them all together to create your potato dressing.
Once the potatoes have finished boiling, drain them and leave to cool.
Once the potatoes have cooled down you are then free to add the dressing: ensure that you turn them over to give them an even consistency.
The beauty of these potatoes is that they will go with almost everything so when you serve them, don’t be afraid to serve them with a multitude of choices.
This excellent little recipe is really simple to make and it will certainly get the taste buds tingling.
- Peel and chop 2 garlic cloves
- Peel and finely chop one red onion
- Small handful of fresh basil.
- 1 tin of chopped tomatoes.
- Squirt of lemon juice
Pop all of the ingredients into a small saucepan and bring to the boil.
Reduce the heat and simmer for 40 minutes, stirring at regular intervals until the contents are nice and soft.
You may need to add a dash of water during this process, but not too much.
Once the relish is ready, transfer the contents from the saucepan into a bowl and pop it in the refrigerator to chill. When it is time to serve up, add the fresh basil.
You may find the need to make extra relish, as a little bit will certainly not last long if you have invited a few guests. This tangy treat can be enjoyed with all kinds of foods, and is exceptionally good on burgers.
